Turkey Bacon Pesto Egg Bites

I always love a delicious high-protein meal prep like these Turkey Bacon Pesto Egg Bites because they are so convenient as a snack or breakfast on busy days. This recipe is healthy, delicious, and satiating.

  • Pesto has basil in it which is rich in antioxidant and nutrients that are great for the immune system, GI tract, heart, and more. I also like using homemade pesto which uses olive oil as a healthier alternative to the store-bought versions with typically have a vegetable oil.

Ingredients

Eggs

Turkey bacon – Use a healthy bacon that is nitrate/nitrite free.

Red bell pepper

Pesto – I use my homemade pesto. You can also use store-bought but please read the ingredients and make sure there’s no canola oil, vegetable oil, soybean oil, etc. Look for one that uses olive oil or avocado oil.

Parmesan cheese – Freshly grated or shredded works best here! It much more flavor in my opinion.

Salt

Method

  1. Preheat the oven to 350ºF and coat the slots of a silicone muffin pan with avocado oil to prevent sticking.
  2. Cook the turkey bacon then chop it up.
  3. Dice up the red bell pepper.
  4. Whisk the eggs in a bowl with a fork. Add the pesto, parmesan cheese, and salt and whisk until combined. 
  5. Oil the silicone muffin pans with avocado oil. Evenly distribute the diced bell pepper and diced turkey bacon into the bottom of each slot. Pour the egg mixture on top, evenly distributing it.
  6. Bake for 22-27 minutes until the middles are set. 
  7. Let them rest in the pan for 5 minutes then transfer to a wire rack to finish cooling.
  8. Store the leftovers in an airtight container in the refrigerator for up to a week.

Modifications

  • Add any other veggies you want, such as spinach, onion, garlic, etc.
  • Sub some of the eggs for egg whites to make it lower fat, lower calorie, and higher protein.
