PrintBuffalo Chickpea Wraps
This will be your new favorite lunch, because YUM.

Ingredients
4 Siete Almond Flour tortillas (or tortillas of your choice)
1 can chickpeas, drained and rinsed
2 Tbsp diced red onion
3 Tbsp buffalo sauce (I used Primal Kitchen “dairy-free” one which is creamy)
1/2 cup shredded carrot
1/2 small avocado, sliced
1 cup chopped romaine lettuce
Cilantro, to taste
Instructions
- If desired, you can cook the chickpeas and onion on 400ºF for 10 mins. Not necessary though!
- Place the chickpeas and onion into a bowl then add the buffalo sauce, salt and pepper and stir together, lightly mashing the chickpeas in the process (you can mash to create your own desired consistency)
- Heat the tortillas in a pan on med-high heat for 10-15 seconds on each side (this softens the tortillas which makes it easier to assemble)
- Spread the mashed chickpea mixture onto the wraps, then add the avocado slices, shredded carrot, chopped romaine lettuce, and cilantro. Fold each wrap, cut and enjoy!
