Salad:
3 cups thinly sliced cucumbers (1.5 large)
2 cups tomato wedges (2 large) or 1 cup halved cherry tomatoes
1/2 cup thinly sliced red onions (1/2 medium)
1/4 cup chopped cilantro, parsley, or other herb (optional)
Vinaigrette:
3 Tbsp extra virgin olive oil
1 lime, juiced (or sub 2 Tbsp balsamic vinegar)
Several large pinches of salt
Several grinds of black pepper
Instructions
- Combine the salad ingredients in a large bowl.
- In a separate small bowl, whisk together the vinaigrette.
- Toss the salad in the vinaigrette.
- If you have time, you can refrigerate it for 1 hour to let the flavors marinate. Toss salad again just before serving to reincorporate any vinaigrette that might have fallen to the bottom while sitting.
