I have been loving these popsicles! They’re flavorful and so refreshing. These Cherry Lime Popsicles are perfect for a summertime snack or dessert, and they are kid-approved, too!! They’re also nourishing and low calorie (only 60 calories per popsicle!), since they’re made with simple ingredients like cherries, yogurt, and maple syrup as the sweetener.
Nutritional benefits of this recipe
- Cherries are packed full of beneficial antioxidants and nutrients. They’re also delicious!
- Yogurt adds healthy protein and fat to these popsicles, making them a more balanced snack that’s satiating and blood sugar balancing.
- Maple syrup is a natural sweetener (from the sap of maple trees) so it’s healthy and also rich in antioxidants and minerals such as manganese, riboflavin, and copper.
- These popsicles only have 60 calories each, so they’re a great low-calorie snack or dessert option that still tastes amazing and satisfies a sweet tooth.
Ingredients in Cherry Lime Popsicles
Frozen cherries – I used dark sweet cherries.
Yogurt – To add healthy fats and protein. The fat in the yogurt helps to make the popsicles less “icy”, so I recommend using whole milk yogurt rather than greek or low-fat yogurt which would make an icy popsicle. If you are dairy-free, then feel free to sub canned coconut milk 1:1 with the yogurt. I personally prefer the “classic” (full-fat) canned coconut milk, but the light coconut milk will work too (make sure it’s from a can – it’s different than that from a carton).
Lime juice – I put just 1/2 of a lime in this recipe, so it’s only a slight tanginess and hint of flavor. If you want the popsicles more tangy, then use juice from the whole lime or even add some lime zest.
Pure almond extract – This part is important in my opinion! Almond extract really brings out the cherry flavor and adds another layer of sweetness to the recipe (even though it’s sugar free), so I prefer it over vanilla extract for this recipe. However, if vanilla is all you have on hand, then no problem. You can use vanilla extract instead, but I would increase it to 1 tsp (almond extract is way stronger).
Maple syrup – as the sweetener. You can also sub honey, but honey does have a strong flavor that would show through, just FYI! It would still be delicious though.
How to make Cherry Lime Popsicles
- Add 15 oz of the cherries to the blender along with the yogurt, lime juice, pure almond extract, and maple syrup. Blend well.
- Evening disperse the mixture between 10 of the popsicle molds (if using the same as me). You’ll want to leave a couple inches at the top to leave space for the chopped cherries.
- Chop up the remaining cherries then put them into the popsicle molds with the popsicle mixture. This adds delicious cherry chunks to the popsicles. You can use a butter knife or popsicle stick to push the chopped cherries down into the molds.
- Put the top on the molds then place food-grade popsicle sticks into the holes.
- Place in the freezer for 4-6 hours, or until completely frozen.
- Transfer the popsicles into wrappers and store in the freezer. Eat within couple months for best flavor.
Modifications
- For dairy-free: Either sub GT’s Cocoyo for the regular yogurt, or you can sub canned coconut milk for the yogurt. I recommend canned coconut milk rather than that from a carton because it has more fat in it, which helps the popsicles be less icy. Full-fat is preferred, but light will work as well.
- Sub 1 tsp vanilla extract in place of the almond extract if that’s all you have on hand. I do recommend trying it with almond extract eventually, though, because it’s the absolute BEST flavor with these cherries.
- For tangy popsicles: Add juice from the whole lime.
- For super tangy popsicles: Add juice from the whole lime and add the zest from the lime as well.
- Other sweeteners you can use: You can sub honey 1:1 in place of the maple syrup, just be aware that the honey flavor will probably show through (still absolutely delicious!). You can also sweeten the popsicles with dates. I would do 6-8 large dates and blend it super well during the first step to make sure it’s completely blended and there aren’t chunks of dates (you’ll want the sweetness fully incorporated).
