This is a fun spin on a simple breakfast meal! It adds a little crunch to your eggs and helps you get in some extra veggies 🙂

Ingredients

Scale

1/2 large bell pepper

3 eggs

Salt & pepper

Toppings & Sides:

Avocado

Cherry tomatoes

Cilantro or parsley

Instructions

  1. Slice rings out of the bell pepper
  2. Preheat a skillet to medium heat with butter or avocado oil and cook for several minutes. You can also flip the rings over if you want to cook both sides equally.
  3. After the rings are browned, crack an egg into the center and cook until the whites are set. Season with salt and pepper.
