Bell Pepper Egg Cups
This is a fun spin on a simple breakfast meal! It adds a little crunch to your eggs and helps you get in some extra veggies 🙂

Ingredients

1/2 large bell pepper
3 eggs
Salt & pepper
Toppings & Sides:
Avocado
Cherry tomatoes
Cilantro or parsley
Instructions
- Slice rings out of the bell pepper
- Preheat a skillet to medium heat with butter or avocado oil and cook for several minutes. You can also flip the rings over if you want to cook both sides equally.
- After the rings are browned, crack an egg into the center and cook until the whites are set. Season with salt and pepper.
