Blueberry Chia Pudding

Ingredients

Scale

1 (14.5oz) can light coconut milk (full-fat works too)

1/2 cup chia seeds

1 heaping cup frozen organic blueberries

2 Tbsp maple syrup (or honey)

1 tsp pure vanilla extract

Several pinches of salt

Instructions

  1. Put all the ingredients into a blender and blend for 10-20 seconds or so.
  2. Pour into a storage container and place in the refrigerator overnight or at least 3-4 hours.
  3. To serve: Scoop the chia pudding into a bowl and top with fruit, granola, or coconut flakes. Enjoy!
