Blueberry Chia Pudding

Ingredients

1 (13.5oz) can light coconut milk

1/2 cup chia seeds (90g)

1 heaping cup frozen organic blueberries (155g)

2 Tbsp maple syrup (or honey) (40g)

1 tsp pure vanilla extract

Several pinches of salt

Instructions

  1. Put all the ingredients into a blender and blend for about 15-20 seconds or so.
  2. Pour into a storage container and place in the refrigerator for at least 30-60 minutes, or 3-4 hours if you want it extra thick (it continues thickening as the chia seeds soak up the moisture).
  3. To serve: Scoop the chia pudding into a bowl and top with fruit, granola, or coconut flakes. Enjoy!
  4. Best eaten within a day or two.
