Blueberry and Honey Baked Oatmeal

Ingredients

Scale

2 cups sprouted rolled oats

1 1/2 cups milk

2 1/2 tsp pure vanilla extract

1 cup organic blueberries (6 oz, fresh or frozen work)

2 large eggs

3 Tbsp honey

2 Tbsp avocado oil or melted coconut oil

1/2 tsp baking powder

1/4 tsp pink salt

1/3 cup grass-fed collagen or your favorite healthy unflavored or vanilla protein powder

Instructions

  1. Preheat oven to 350°F.
  2. Mix all ingredients together in a large bowl.
  3. Pour into an 8×8 baking dish.
  4. Bake for 37-40 minutes until a toothpick comes out clean. 
  5. Remove baked oatmeal from the oven and let sit for 5 minutes to cool. Enjoy!
