Cherry Lime Popsicles

Ingredients

4 cups frozen dark sweet cherries, divided (20oz)

3/4 cup plain whole-milk yogurt (6.5 oz)

1/4 cup maple syrup

1/2 lime, juiced

1/4 tsp pure almond extract

Instructions

  1. Add 15oz (3 1/2 cups) of the cherries to the blender (saving the rest for the next step) along with the whole yogurt, lime juice, pure almond extract, and maple syrup. Blend well.
  2. Evenly disperse the mixture between 10 of the popsicle molds (if using the same as me). You’ll want to leave a couple inches at the top to leave space for the chopped cherries. 
  3. Chop up the remaining cherries then put them into the popsicle molds with the popsicle mixture. This adds delicious cherry chunks to the popsicles. You can use a butter knife or popsicle stick to push the chopped cherries down into the molds. 
  4. Put the top on the molds then place food-grade popsicle sticks into the holes. 
  5. Place in the freezer for 4-6 hours, or until completely frozen. 
  6. Transfer the popsicles into wrappers and store in the freezer. Eat within couple months for best flavor.
