Chewy Chocolate Nourish Balls

I absolutely love the chewy texture of these nourish balls! They’re so easy to whip up and are the perfect pick-me-up for busy days. You can have them as a pre-workout snack, as a snack on-the-go, or even as a sweet treat at the end of the day. The chewy texture is to die for and they’re perfectly sweet for those who have a sweet tooth and love chocolate, but also love to eat nourishing food. These Chewy Chocolate Nourish balls are so great to meal-prep even the busiest of weeks.

Nutritional benefits of this recipe

  • I use sprouted oats by One Degree Organics. You can find it in store or online! Sprouted grains are much easier on our digestive system and more nutrient dense. The sprouting process decreases the anti-nutrients that grains have, decreases the starch, and increases the nutrients and protein. It’s such a wonderful way to prep grains and makes them more of a superfood!
  • Cashews are a great source of copper, magnesium, manganese, zinc, lutein, and vitamin E. They are great for heart health, brain health, bones, and eyes.
  • Dates are fruit that come from the date palm tree that’s native to the Middle East. They are rich in antioxidants, fiber, vitamins, and minerals and are a fantastic natural sweetener.
  • Pure maple syrup is the sap from maple trees and is my personal favorite natural sweetener! It is rich in manganese, calcium, iron, magnesium, potassium, zinc, and copper. These minerals help with cell formation, maintaining healthy red blood cells, immune support, and more. If you love the health benefits of honey, then you’ll definitely love the benefits of pure maple syrup. Keep in mind it is very different from pancake syrup that’s maple-flavored.
  • Cacao powder and cacao nibs are rich in magnesium, zinc, iron, and antioxidants. Another one of my favorite superfoods, especially for hormone health.

Ingredients for Chewy Chocolate Nourish Balls

Oats – I use One Degree Organics oats because they are sprouted, which makes them much easier to digest as well as more nutrient-dense.

Raw cashews – Use unsalted.

Dates – I used medjool

Chocolate collagen – I love using Further Food! It’s a great way to add a little more protein to these nourish balls.

Cacao powder – for the chocolate flavor. 

Pure maple syrup – or use honey. To add a little more flavor and sweetness.

Cacao nibs or chocolate chips – for a little crunch. Optional.

Pure vanilla extract

Salt

How to make Chewy Chocolate Nourish Balls

  1. Set up a food processor.
  2. Add the base ingredients and blend for 1-3 minutes until fully blended and it easily sticks together without being crumbly. It becomes a chewy texture as the cashews become more creamy and blend in with the other ingredients.
  3. If desired, blend in the chocolate chips or the cacao nibs just until incorporated. 
  4. Form into about 25 balls and store in an airtight container in the refrigerator.

Modifications and variations

  • Feel free to use almonds or pecans in place of the cashews. Keep in mind it’ll change the flavor.
  • You can use unflavored collagen if needed – you just may want to slightly increase the sweetener in the recipe if needed since the chocolate collagen has some sweetness to it. But you may not need any extra sweetener at all!
  • Omit the collagen if desired.

Ingredients

Base:

1 cup sprouted rolled oats (110g)

1 heaping cup whole raw cashews (160g)

1 packed cup medjool dates (811 large dates, 175g)

1/4 cup chocolate collagen (38g)

3 Tbsp cacao powder (20g)

2 Tbsp pure maple syrup (42g) – or sub honey

1/2 tsp pure vanilla extract

1/4 tsp salt

Extras:

Optional: 3 Tbsp chocolate chips or 2 teaspoons cacao nibs
