These Chili Lime Roasted Sweet Potatoes are the perfect topping for nourish bowls or side for burgers, chicken, salmon, and more. It’s such a nourishing and delicious combination!

Nutritional benefit of this recipe:

  • Sweet potatoes are rich in beta-carotene, vitamin B6, Vitamin B5, Vitamin C, Manganese, and potassium. They are also rich in antioxidants that protect your body from free radicals, therefore reducing inflammation and decreasing illness.
  • Ginger is rich in antioxidants and is gut-loving, helping to reduce bloating and intestinal gas. It also helps the body balance blood sugar and inflammation. It’s great for nausea, so if you’re ever feeling nauseous, try drinking tea made by boiling fresh ginger and peppermint, both of which help nausea significantly.
  • Garlic and ginger are both antimicrobial, benefitting our oral and gut bacteria.
  • Lime is rich in vitamin C and helps with iron absorption, immunity, and kidney stones.

Ingredients for Chili Lime Roasted Sweet Potatoes

Sweet potatoes – You can also sub purple potatoes, white potatoes, or baby potatoes.

Avocado oil – To coat the sweet potatoes for roasting

Lime – You’ll use both the juice and the zest

Fresh ginger – This is optional, but a few sprinkles of grated ginger adds a nice touch!

Garlic cloves – For flavor.

Chili powder, smoked paprika, salt – The spices. The smoked paprika is optional – it just adds another layer of flavor that’s delicious but isn’t necessary.

To garnish: Lime zest, sliced green onion, red pepper flakes, and/or cilantro. You can also drizzle with your favorite sauce or dip the sweet potatoes in your favorite sauce.

How to make Chili Lime Roasted Sweet Potatoes

  1. Preheat oven to 375ºF. Line a large baking sheet (or two small-medium) with parchment paper.
  2. Wash and peel the sweet potatoes. Cut up into 3/4-1″ pieces (or 1/2″ pieces for faster cooking).
  3. Put the sweet potato in a large bowl and toss in the olive oil. 
  4. Add the lime juice & zest, the fresh grated ginger, and the minced garlic cloves and toss again.
  5. Sprinkle the chili powder and salt on top and toss to combine until all sweet potato pieces are coated.
  6. Dump the sweet potatoes onto the baking sheet and spread out into an even layer, making sure they’re not too cramped or else it’ll take longer to cook.
  7. Bake for 40-50 minutes until browned and fork tender.
