Chili Lime Roasted Sweet Potatoes

Ingredients

3 medium sweet potatoes, cut into 3/41” pieces

2 Tbsp avocado or olive oil

Zest and juice of 1 lime, plus more zest for garnish

A touch of fresh grated ginger

3 garlic cloves, minced

1 Tbsp chili powder

Optional: A pinch of smoked paprika

3/4 tsp pink salt, to taste

Garnish:

Lime zest

Green onion, sliced

Cilantro, chopped (optional, or sub parsley)

Red pepper flakes for spice (optional)

Instructions

  1. Preheat oven to 375ºF. Line a large baking sheet (or two small-medium) with parchment paper.
  2. Wash and peel the sweet potatoes. Cut up into 3/4-1″ pieces (or 1/2″ pieces for faster cooking).
  3. Put the sweet potato in a large bowl and toss in the olive oil. 
  4. Add the lime juice & zest, the fresh grated ginger, and the minced garlic cloves and toss again.
  5. Sprinkle the chili powder and salt on top and toss to combine until all sweet potato pieces are coated.
  6. Dump the sweet potatoes onto the baking sheet and spread out into an even layer, making sure they’re not too cramped or else it’ll take longer to cook.
  7. Bake for 40-50 minutes until browned and fork tender.
