These healthy yet decadent bars will hit the spot for just about any sweet tooth. Prep it ahead of time to enjoy a healthy dessert throughout the week!

Cookie Dough Base:
2/3 cup creamy nut butter of choice (I used almond)
1/3 cup maple syrup
1 tsp vanilla extract
1/3 cup oat flour
1/4 cup healthy chocolate chips
Caramel Middle:
1/2 cup cashew butter (I don’t recommend replacing with another nut butter)
1/4 cup maple syrup
A few large pinches salt
Chocolate Topping:
1/2 cup chocolate chips
1 1/2 teaspoons coconut oil
Garnish:
Flaky sea salt
Instructions
- In a medium bowl, combine creamy nut butter, maple syrup, vanilla extract, and oat flour. Then fold in the chocolate chips. Press the cookie dough into the bottom of an 8×4 inch loaf pan (you can use different sizes if desired – it’ll just be thinner or thicker bars depending on what you use).
- Using the same bowl from before, combine the salted caramel ingredients. Pour the salted caramel into the pan and spread evenly across the cookie dough.
- In a microwave safe bowl, melt the chocolate chips with the coconut oil. Melt it in 20 second increments, stirring in between. Pour the melted chocolate on top of the salted caramel and spread evenly. Place in the refrigerator for 1 hour.
- When ready to serve, sprinkle some flaky sea salt on top. Enjoy! Keep it stored in the refrigerator.
