Chocolate Superfood Waffles

This is a superfood waffle to say the least. It’s got cacao, maca, and lucuma! All three of these are great antioxidants. I love cacao because it is a mood booster and high in magnesium. Maca is great for balancing hormones and lucuma is a delicious low GI sweetener.

Ingredients

Dry:

1/2 cup super-fine almond flour (I use Bob’s Red Mill)2 Tbsp cacao powder (shopkarenberrios) 2 Tbsp maple syrup, honey, or coconut sugar 1 Tbsp Lucuma (shopkarenberrios) 1 tsp maca powder (shopkarenberrios) 1/2 tsp baking powder A few pinches of salt

Wet:

2 eggs 1/2 tsp vanilla extract 1 Tbsp milk

Instructions

  1. Combine dry ingredients.
  2. Mix in wet ingredients.
  3. Fold in chocolate chunks.
  4. Cook in the waffle maker. I made two small waffles!
