Coconut Berry Popsicles

Indulge in these healthy popsicles for 4th of July! They are loaded with flavor and are also rich in antioxidants, vitamins, and minerals.

Recommendation for color:

If you want a more vibrant color, then use cherries for the red layer instead of strawberries (which create a more pink color). You can also add blue spirulina to the blueberry layer for a more vibrant color there as well.

Ingredients

Units Scale

Strawberry layer:

1 cup strawberries or cherries

1/2 cup full-fat coconut milk (from can)

1/4 tsp vanilla extract

1 Tbsp coconut sugar, more to taste

Optional for color: 1 Tbsp powdered strawberries

Coconut Layer:

1 cup full-fat coconut milk (from can)

1/4 tsp vanilla extract

1 Tbsp honey, more to taste

Blueberry Layer:

1 cup blueberries

1/2 cup full-fat coconut milk (from can)

1/4 tsp vanilla extract

1 Tbsp coconut sugar, more to taste

Optional for color: 1 tsp blue spirulina

Instructions

  1. Blend the strawberry layer together and pour into a popsicle mold, dividing evenly between 9 molds.
  2. Blend the coconut layer together and very gentle pour into the popsicle mold on top of the strawberry layer. If you want a more defined layer, then you can freeze the strawberry layer for 30 minutes before pouring.
  3. Blend the blueberry layer together and very gentle pour over the coconut layer. You can do the same for this to create a more distinct layer if you freeze it.
  4. Cover the popsicles then put the popsicle sticks in them.
  5. Freeze the popsicles for at least 6 hours, until fully frozen.
