Indulge in these healthy popsicles for 4th of July! They are loaded with flavor and are also rich in antioxidants, vitamins, and minerals.
Recommendation for color:
If you want a more vibrant color, then use cherries for the red layer instead of strawberries (which create a more pink color). You can also add blue spirulina to the blueberry layer for a more vibrant color there as well.

Ingredients
Strawberry layer:
1 cup strawberries or cherries
1/2 cup full-fat coconut milk (from can)
1/4 tsp vanilla extract
1 Tbsp coconut sugar, more to taste
Optional for color: 1 Tbsp powdered strawberries
Coconut Layer:
1 cup full-fat coconut milk (from can)
1/4 tsp vanilla extract
1 Tbsp honey, more to taste
Blueberry Layer:
1 cup blueberries
1/2 cup full-fat coconut milk (from can)
1/4 tsp vanilla extract
1 Tbsp coconut sugar, more to taste
Optional for color: 1 tsp blue spirulina
Instructions
- Blend the strawberry layer together and pour into a popsicle mold, dividing evenly between 9 molds.
- Blend the coconut layer together and very gentle pour into the popsicle mold on top of the strawberry layer. If you want a more defined layer, then you can freeze the strawberry layer for 30 minutes before pouring.
- Blend the blueberry layer together and very gentle pour over the coconut layer. You can do the same for this to create a more distinct layer if you freeze it.
- Cover the popsicles then put the popsicle sticks in them.
- Freeze the popsicles for at least 6 hours, until fully frozen.
