Delicious Banana Granola

I typically use spotty bananas for making banana bread or muffins, but today I decided to try something new! This Delicious Banana Granola is a new staple in my household. I love keeping granola on hand for snacks, as cereal, as a topping for yogurt bowls, smoothie bowls, etc. It’s so versatile and scrumptious. I obviously love making granola because I’ve post many other flavors! It’s definitely fun to come up with new combinations.

Nutritional benefits of this recipe

  • We’re using sprouted rolled oats for this recipe! Sprouted oats are significantly healthier because the sprouting process decreases the phytates and lectins (anti-nutrients that make it difficult to digest and also inhibit the absorption of the nutrients in the oats). Since sprouted oats have less of these anti-nutrients, it’s much easier to digest, has more bio-available nutrients, more protein, and also has a lower glycemic index because the sprouting process also breaks down the starch in the oats.
  • Bananas are rich in potassium, magnesium, and vitamin B6.
  • Raw honey is rich in antioxidants and has antibacterial properties.
  • Cinnamon (specifically Ceylon) is incredible at balancing blood sugar and many studies show it being effective for diabetics to reduce insulin need. I recommend using Ceylon instead of Saigon for these benefits. The product will specify if the cinnamon is Ceylon, but if it just says “cinnamon” then it’s likely Saigon / (also known as Vietnamese cinnamon).
  • Coconut oil is rich in antioxidants, medium chain triglycerides, and it has anti fungal and antibacterial properties from lauric acid and caprylic acid.
  • Chia seeds are rich in omega-3’s, antioxidants, minerals, ALA (alpha linolenic acid), etc.

Ingredients for banana granola

Sprouted rolled oats – I use One Degree Organics

Nuts – I recommend pecans and cashews for this recipe.

Banana

Raw honey – Or you can use maple syrup, but keep in mind that maple syrup doesn’t create as large of clusters.

Avocado oil – Or sub melted coconut oil

Chia seeds – Optional.

Pure vanilla extract

Cinnamon, salt, and optional cloves, allspice, or nutmeg

Delicious Banana Granola

How to make banana granola

  1. Preheat oven to 320ºF and line a baking sheet with parchment paper.
  2. In a large bowl, stir together the oats, nuts, chia seeds, cinnamon, salt, cloves, allspice, and nutmeg. Add the banana and mash it. Then add the raw honey and the avocado oil and mix everything together thoroughly until it’s all covered in the banana, honey, and avocado oil.
  3. Transfer the mixture to the baking sheet and press it down, flattening it out into about a 1/4 inch thick layer, making sure the layer is even and the edges aren’t thinner than the middle.
  4. Bake for 25-30 minutes until golden on the edges. Remove from the oven and break into clusters, then spread the clusters out and put back into the oven for another 8-10 minutes until everything is lightly golden.
  5. Remove from the oven and let it cool to room temperature, about 20 minutes. It will harden and crisp up.

Modifications

  • Use any nut or seed that you prefer in the recipe! I used cashews because it’s what I had on hand, but pecans would be absolutely delicious too!
  • For more crunchiness, double the amount of nuts you use (1 1/2 cups).
  • You can use maple syrup in place of the honey, but keep in mind that honey helps create bigger clusters. So as long as you’re fine with it not having big clusters, go for the maple syrup! You can also use date syrup, however, I have not tried this yet.
