Delicious Banana Granola

Ingredients

1 medium spotty banana (120g)

2 1/2 cups sprouted rolled oats (250g)

3/4 cup roughly chopped cashews or pecans (100g)

1/3 cup raw honey (125g)

3 Tbsp avocado oil (or melted unrefined coconut oil)

1 Tbsp chia seeds

1 1/2 tsp pure vanilla extract

3/4 tsp ground cinnamon

3/4 tsp salt

Optional: Sprinkle of cloves, nutmeg, allspice

Instructions

  1. Preheat oven to 320ºF and line a baking sheet with parchment paper.
  2. In a large bowl, stir together the oats, nuts, chia seeds, cinnamon, salt, cloves, allspice, and nutmeg. Add the banana and mash it. Then add the raw honey and the avocado oil and mix everything together thoroughly until it’s all covered in the banana, honey, and avocado oil.
  3. Transfer the mixture to the baking sheet and press it down, flattening it out into about a 1/4 inch thick layer, making sure the layer is even and the edges aren’t thinner than the middle.
  4. Bake for 25-30 minutes until golden on the edges. Remove from the oven and break into clusters, then spread the clusters out and put back into the oven for another 8-10 minutes until everything is lightly golden.
  5. Remove from the oven and let it cool to room temperature, about 20 minutes. It will harden and crisp up.
