Easy Homemade Granola

Ingredients

1/3 cup honey1 Tbsp coconut oil1 tsp pure vanilla extract1 1/3 cups rolled oats1/3 cup chopped almonds (or other nut)1/3 cup pumpkin seeds3 Tbsp shredded coconut or coconut flakesFew pinches of saltOptional: 3 Tbsp chopped goji berries (or sub other dried fruit, like craisins)Optional: 3 Tbsp unsweetened or low-sugar raisins

Instructions

  1. Preheat oven to 320ºF and line a baking sheet with parchment paper.
  2. In a large bowl, whisk the honey, melted coconut oil, and vanilla extract together. Add the oats, almonds, pumpkin seeds, coconut flakes, and salt and mix well.
  3. Transfer the mixture to the baking sheet and press it down, keeping it all together but flattening it out into about a 1/4-1/2 inch thick layer.
  4. Bake for 23-28 minutes until golden brown. The granola won’t be crunchy yet.
  5. Remove from the oven and add the dried fruit on top, just pressing it down on top of the granola. Then let it cool to room temperature. It will harden and crisp up during this time. After fully cooled and hardened, break it up into clusters.

Notes

Optional flavors (choose only one combo):

1. Sub maple syrup for the honey, sub 1/2 tsp maple extract for the vanilla extract, and add 1 tsp cinnamon + 1/8 tsp nutmeg

2. Sub dried blueberries for the raisins and goji berries and add 1-2 Tbsp lemon zest

3. Add 2-3 Tbsp orange zest
