Easy Mango Salsa
This recipe makes about 2-2.5 cups of salsa. If you are making this for a group of people, I recommend doubling the recipe! When using it as a salsa dip, it won’t go as far versus if you are just using it as a topping for lettuce wraps, chicken, etc.

Ingredients

1 large mango, diced *ripe but still firm
1 small red bell pepper, diced
1/4 small sweet onion, diced
1/3 cup chopped cilantro, or to taste
Zest and juice of 1 lime
(optional) 1 small jalapeño, seeded and minced
1/8 tsp salt, more to taste
Freshly ground black pepper to taste
Instructions
- Prepare all the ingredients, mix it together in a bowl, and serve immediately. Store leftovers in the refrigerator.

Notes
*Make sure your mangoes are ripe but not too squishy! The salsa will be mushy if the mangoes are overly ripe.

The perfect balance of sweet and spicy. So delicious. I was eating it with a spoon at some point it was so good. No chips needed lol. This could be used in many ways – on top of a salad, on a sandwich, over chicken or pork, on a taco…Colorful, nutritious, delicious. Yummmm!
