I’ve made this Mango Salsa a dozen or more times, and it’s ALWAYS gone within a few hours of making it. It is truly so good I eat it by the spoonful! If you are a fan of mango, then you’ll definitely be obsessed with this salsa just as much as I am. It has fresh lime juice and zest which brings out all of the flavors perfectly. I am definitely in love.

Ingredients

Mango

Bell pepper

Cilantro

Onion

Lime – Juice and zest

Jalapeno

Salt, black pepper

Method

  1. Prepare all the ingredients, mix it together in a bowl, and serve immediately. Store leftovers in the refrigerator.

This recipe makes about 2-2.5 cups of salsa. If you are making this for a group of people, I recommend doubling the recipe! When using it as a salsa dip, it won’t go as far versus if you are just using it as a topping for lettuce wraps, chicken, etc.

Ingredients

Scale

1 large mango, diced *ripe but still firm

1 small red bell pepper, diced

1/4 small sweet onion, diced

1/3 cup chopped cilantro, or to taste

Zest and juice of 1 lime

(optional) 1 small jalapeño, seeded and minced

1/8 tsp salt, more to taste

Freshly ground black pepper to taste

Notes

*Make sure your mangoes are ripe but not too squishy! The salsa will be mushy if the mangoes are overly ripe.

  3. The perfect balance of sweet and spicy. So delicious. I was eating it with a spoon at some point it was so good. No chips needed lol. This could be used in many ways – on top of a salad, on a sandwich, over chicken or pork, on a taco…Colorful, nutritious, delicious. Yummmm!
