These Orange Fig Energy Bites are a naturally sweetened, nutrient-dense snack. It boasts only a handful of ingredients and the natural sweeteners are the figs and orange juice! They are sweet, perfectly gooey bites that are great for a mid-afternoon pick-me-up or sweet treat after your meals. If you love figs, then you’ll love these Orange Fig Energy Bites!

Ingredients for Orange Fig Energy Bites

Figs

Cashews – Feel free to sub with another nut such as pecans or almonds if desired.

Rolled oats – For some fiber and healthy nutrients.

Orange – You’ll use the zest as well as the juice.

Vanilla extract

Salt

Tools needed:

Food Processor

Parchment Paper – I recommend using unbleached.

Method

  1. Add all ingredients to a food processor and pulse until combined. It should clump up easily and will likely be slightly sticky. They will be a gooey texture, so if you would rather them not be as gooey, then you can add more cashews to harden them a bit.
  2. Roll the dough into about 15 small balls. It helps if you have a few drops of water on the palms of your hands to prevent sticking.
  3. Place on a plate lined with parchment paper and place in the freezer for 15 minutes (cooling before storing them will prevent sticking). Then transfer them to an airtight container and keep stored in the refrigerator. Eat within 5 days.

Modifications

  • Sub another nut for the cashews such as almonds or pecans.
  • Omit the vanilla extract if you want, or sub with another extract such as almond. I would start smaller if subbing with almond though as it tends to be a bit stronger.
  • Sub the orange zest and juice for lemon juice for another flavor profile.

These Orange Fig Energy Bites are a gooey texture when stored in the refrigerator (my personal favorite), or they are a hard texture when stored in the freezer. If stored in the refrigerator, they’re ready to eat right away. However, if you store them in the freezer, you may need to let them sit out for a couple minutes before eating to allow them to soften a little.

How to store the Orange Fig Energy Bites

Store them in an airtight container in the refrigerator for up to 5 days. You can also store in the freezer in an airtight container for up to 2 months. If storing in the freezer, you’ll want to let them sit out for a few minutes to soften before eating.
