Easy Orange Fig Energy Bites (gluten-free, dairy-free, naturally sweetened)

Ingredients

1 cup dried figs (1011 dried figs)

3/4 cup cashews (120g)

1/3 cup rolled oats (40g)

Zest of 1 large orange

2 1/2 Tbsp fresh orange juice (1/2 of the orange, 35g of juice)

1/4 tsp vanilla extract

1/41/2 teaspoon salt, to taste, start small and add more to taste

Instructions

  1. Add all ingredients to a food processor and pulse until combined. It should clump up easily and will likely be slightly sticky. They will be a gooey texture, so if you would rather them not be as gooey, then you can add more cashews to harden them a bit.
  2. Roll the dough into about 15 small balls. It helps if you have a few drops of water on the palms of your hands to prevent sticking.
  3. Place on a plate lined with parchment paper and place in the freezer for 15 minutes (cooling before storing them will prevent sticking). Then transfer them to an airtight container and keep stored in the refrigerator. Eat within 5 days.
