1/2 pint cherry tomatoes, halved
1 small cucumber, sliced and quartered
1 small-medium bell pepper, chopped or diced
1/4 cup thinly sliced
red onion1/4 cup pitted sliced black or
green olives1/4 cup pitted sliced
kalamata olives1/4 cup chopped fresh
basil3 Tbsp chopped fresh parsleyOptional:
1/4 cup sliced
banana peppers (or sub pepperoncini)
Herbs Olive Oil Dressing
3 Tbsp olive oil
1/2 medium lemon, juiced
2 small garlic cloves, minced
2 tsp stone ground mustard
1/2 tsp dried oregano
1/4 tsp dried thyme
1/8 tsp salt, more to tasteFreshly ground black pepper (6 grinds, to preference)
