Pasta Salad

1 (8oz) box Banza pasta, cooked (or sub pasta of choice)1/2 pint cherry tomatoes, halved1 small cucumber, sliced and quartered1 small-medium bell pepper, chopped or diced1/4 cup thinly sliced red onion1/4 cup pitted sliced black or green olives1/4 cup pitted sliced kalamata olives1/4 cup chopped fresh basil3 Tbsp chopped fresh parsleyOptional: 1/4 cup sliced banana peppers (or sub pepperoncini)

Herbs Olive Oil Dressing

3 Tbsp olive oil1/2 medium lemon, juiced2 small garlic cloves, minced2 tsp stone ground mustard1/2 tsp dried oregano1/4 tsp dried thyme1/8 tsp salt, more to tasteFreshly ground black pepper (6 grinds, to preference)

Instructions

  1. Cook the pasta as instructed on the package.
  2. Prep the veggies as instructed. Mix together the dressing ingredients.
  3. Assemble by mixing all prepped ingredients together and tossing in dressing.
  4. Serve and enjoy!
