Easy Veggie Turkey Burger

This recipe is a perfect way to use up some of the veggies you have sitting in your refrigerator! Use whatever veggies, herbs, and spices you have on hand. It’s quick to throw together and is a great meal prep for the week. You can also freeze the burgers for up to 2 months to have on hand for busy nights. If you don’t have any fresh herbs on hand, then that’s totally fine! You can just omit it from the recipe or add an extra teaspoon or two of a dried herb.

Ingredients

1 lb ground turkey (or other ground meat of choice)

1 cup diced veggies of choice (I used bell pepper and fennel)

3 cups spinach or other leafy green

1/4 cup fresh herb, chopped* (I used parsley, but you can also use cilantro or basil)

1 tsp salt

1 tsp dried herb (I used oregano)

1/2 tsp garlic powder

1/4 tsp black pepper

Optional add in: ground turmeric for anti-inflammation

Instructions

  1. Sauté the diced veggies in a skillet with olive oil on medium heat until tender. Add the spinach and sauté until wilted.
  2. Place the ground meat in a large mixing bowl, add the sautéed veggies, the fresh herb, and the seasonings and mix until combined.
  3. Form the mixture into patties. I did 5, but for larger burgers you can do 4.
  4. Preheat a large skillet to medium heat (you can use the same as before) Place olive oil in the pan, then cook the patties for a few minutes on each side until cooked through.
  5. Store leftovers in an airtight container in the refrigerator for up to 5 days. You can also freeze leftovers in an airtight container for up to 2 months.
