This shakshuka is a great breakfast because it’ll set you up for success with all the vitamins, minerals, protein, and healthy fats.

Fennel is a truly versatile, aromatic food, so I wanted to create a recipe using it! It is an excellent source of vitamin C, potassium, fiber, trace minerals, and the anticancer coumarin compound. Fennel is an intestinal antispasmodic, a carminative, a stomachic, and an anodyne. A truly healing food when dealing with digestive dysfunction.

You also get the benefits of the parsley (reduces bloating) or cilantro (protects against heavy metals), the garlic (antimicrobial), and the nutritional yeast if used (very rich in b vitamins). Of course, everything else is healthy as well but these that I’ve mentioned have a very therapeutic effect on the digestive system in particular.

Ingredients

Scale

4 large eggs

1/2 Tbsp olive oil

1 medium fennel bulb, diced

1/2 large green bell pepper, diced

3 garlic cloves, minced

1/2 tsp ground cumin

1/2 teaspoon paprika

2 pinches of cayenne (optional)

28oz can crushed tomatoes

1/4 tsp salt, more as needed

1/4 tsp black pepper

Toppings:

Fresh parsley or cilantro

Red pepper flakes (optional)

Nutritional yeast (optional)

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add fennel, bell pepper, and minced garlic and cook 5 minutes, until softened, stirring consistently.
  3. Stir in cumin, paprika, and cayenne. Then pour in tomatoes and add the salt and pepper. Simmer for several minutes.
  4. Crack eggs into skillet and cook for a minute. Add a top to the pan and let it simmer for several minutes, until the egg whites are set.
  5. Top with parsley and a fresh grind of salt and pepper if desired.

  2. One of my favorites because it’s so different than the typical meal. We eat this for dinner regularly. The sauce is so good, I love it left over on toast or pasta.
