This easy salad is a great topping for nourish bowls or is also a refreshing side or snack. It’s nutrient-dense and delicious – Parsley is great for reducing water weight and bloating, cucumbers are hydrating, and chickpeas are high in protein. It’s easy to customize, so add any other colorful ingredients you want such as red onion, fresh dill, or unsweetened craisins. The options are limitless! I always love making my Mediterranean Chickpea Salad every spring and summer, but when I don’t have all of the ingredients on hand, I simplify it a lot. This Fresh Parsley Chickpea Salad is a much simpler version!

- Parsley is an anti-diuretic, therefore reducing water weight and bloating. It strengthens kidney, bladder, and urinary health. It also helps blood clotting and bone health. It’s rich in Vitamin K, C, and antioxidants. All herbs are great for detoxing the body, preventing cancer, diabetes, and more.
- Chickpeas are rich in fiber and have a good amount of protein for a plant-based food. They also have a low glycemic index, making them blood sugar friendly.
- Cucumber is hydrating and rich in electrolytes. It is also rich in Vitamin K, B, and C.
Ingredients for Fresh Parsley Chickpea Salad
Chickpeas
Cucumber – Feel free to toss any other veggies into the mix.Ci
Parsley – You can also sub with cilantro or dill if that’s what you prefer. It would be delicious! Cilantro would sub 1:1, but if using dill, then use a lot less – Just a couple tablespoons or so.
Olive oil – Use extra virgin olive oil.
Red wine vinegar
Lemon
Garlic cloves
Spices: Oregano, black pepper, and salt

Modifications
- Add unsweetened dried cranberries to the mix for color and flavor.

Ingredients
1 (15oz) can garbanzo beans, drained and rinsed
1 cup parsley, finely chopped (measure before chopping)
1 large cucumber, diced
Optional: 1/3 cup diced red onion
Optional: 1/4 cup unsweetened dried cranberries
Optional: 1/2 Tbsp chopped fresh dill
Dressing:
2 Tbsp olive oil
1 Tbsp red wine vinegar
1/2 lemon, juiced
1/2 tsp dried oregano
2 garlic cloves, minced
Lots of freshly ground black pepper (8-10 grinds)
Several grinds of salt, to taste
Instructions
- Combine all ingredients together in a bowl, toss in the vinaigrette, and enjoy!
- Store leftovers in an airtight container in the refrigerator for up to 5 days. Toss again before serving each time to re-incorporate the vinaigrette.
