Gluten-Free Waffles

Ingredients

1/2 cup almond flour

1 Tbs coconut sugar (you can also omit this if you want!)

1/2 tsp baking powder

A couple dashes of cinnamon

A few pinches of salt

1/2 tsp vanilla

2 large eggs

Instructions

  1. Preheat a waffle iron and coat with oil.
  2. In a bowl, mix together the almond flour, coconut sugar, baking powder, salt, and cinnamon.
  3. Add the vanilla and eggs and mix with a fork until incorporated.
  4. Add all of the mixture to the waffle iron if you want a full, round waffle. For the cooking time- I go a couple minutes longer than the waffle iron suggests. However, if you want two smaller waffles, then add half of the mixture to the waffle iron and cook till done. Add the second half when ready.
  5. Add whatever toppings you want!

Notes

A fun and SUPER delicious topping you can do for these waffles is defrosted frozen blackberries: Take some frozen blackberries out of the freezer and let them defrost; when they’re defrosted, there is a bunch of blackberry “juice” that you can drizzle over the pancakes, and then you add the berries on top! (I also like to add some more cinnamon on top). This is my favorite way to eat the waffles because it adds so much color and blackberry flavor throughout the waffles! But if you don’t want to mess with defrosting berries, then you can just use fresh fruit or any other topping you desire, such as savory ones like eggs. I hope you enjoy the recipe!!
