Almond Joys are an iconic candy that are actually super easy to make at home with healthy, simple ingredients! If you love a chocolatey candy but want it to be healthier (and lower glycemic!), then you will definitely need to save this recipe and keep it on hand for when those cravings hit. Coconut is incredibly healthy, but the typical almond joys we all know from childhood are primarily made of inflammatory refined sugar, hydrogenated oils, emulsifiers, artificial/’natural’ flavors, preservatives, food dye, etc. The good news, though?! You can make these Healthy Almond Joy Cups at home in 20 minutes with just a few ingredients that are actually good for you! AND they taste just as delicious!
Reasons you’ll love these Healthy Almond Joy Cups
- No refined sugar
- No hydrogenated oils
- Zero emulsifiers
- Zero food dye
- No artificial / ‘natural’ flavor
- Just real, nutritious, God-given ingredients!
- They’re much lower glycemic than store-bought – especially if you opt for dark chocolate or a naturally sweetened chocolate like Hu chocolate chips.
- Only 3 grams of sugar for each almond joy!

Nutritional benefits of these Healthy Almond Joy Cups
- Shredded coconut is rich in nourishing fats such as MCT’s, helping support steady energy, healthy digestion, and lasting fullness. It also provides important minerals like manganese and copper, along with naturally occurring compounds that support immune function, gut balance, and overall metabolic health.
- Maple syrup is a natural sweetener from the sap of maple trees. It’s rich in antioxidants and minerals such as manganese, zinc, copper, calcium, potassium, and riboflavin.
- Coconut oil is rich in natural saturated fats, including MCTs, which provide quick, steady energy and support metabolic function. It contains lauric acid, known for its antimicrobial properties that support immune and gut health.
- The Cacao in chocolate chips provides natural antioxidants, including flavonoids, that help protect cells and support heart and metabolic health. It also supplies minerals like magnesium and iron for energy production and muscle function, along with naturally occurring compounds that support brain health and mood. I definitely recommend buying a healthier brand that has simple ingredients and no natural flavors.
- Almonds provide nourishing fats, plant-based protein, and fiber that support steady energy, balanced blood sugar, and lasting fullness. They’re also rich in vitamin E, magnesium, and manganese, which help support antioxidant protection, muscle function, and overall metabolic health.

Ingredients for Healthy Almond Joy Cups
Finely shredded coconut
Pure maple syrup – or you can sub honey
Chocolate chips – I used semi-sweet, but you can use dark chocolate or milk chocolate too.
Almonds
How to make Healthy Almond Joy Cups
- Mix together the shredded coconut, pure maple syrup, and melted coconut oil.
- Scoop mixture into a ‘mini peanut butter cup’ silicone mold and press it down – I used this 30-slot mold and about 1 full teaspoon per mold to fill each cavity halfway. Read note below if you don’t have a mold.
- Slowly melt together the chocolate chips and coconut oil in a double boiler or in 15 second increments in the microwave, stirring in between.
- Drizzle the chocolate on top of the shredded coconut mixture, then place an almond on top of each and press it down slightly.
- Refrigerate for 1 hour, then remove from the molds and store in an airtight container in the refrigerator. If a softer texture is preferred, then simply leave at room temperature for a few minutes before eating.

Note if you don’t have a mold, You have two options:
- You can put into mini or regular sized cupcake liners (you’ll just want to make them thinner).
- Or for the easiest/fasted option, you can do it on a baking sheet: Line a baking sheet with parchment paper. Press down the shredded coconut mixture onto the parchment paper. Then drizzle the melted chocolate over top and spread it out. Place almonds on top of the melted chocolate. Place into the refrigerator to harden for 1 hour, then cut it up into pieces.

Modifications and variations
- For a more coconut-heavy option: Increase the coconut, decrease the chocolate. If you want mostly coconut and just a little bit of chocolate, then increase the shredded coconut to 1 cup (and add another 1/2 Tbsp of coconut oil). Then decrease the chocolate to 2/3 cup (and decrease the coconut oil for the chocolate to 1 1/2 teaspoon). This will make it more coconut-heavy with a thinner layer of chocolate on top.
- If you don’t have a candy mold, then you can put the mixture into mini cupcake liners (or regular sized ones, although I recommend making them thin), or you can do it all on a parchment lined baking sheet (I have instructions on the recipe card for this).
