Healthy Chocolate Protein Pudding

Dessert, Gluten-Free, Nut-Free, Quick and Easy 2 comments

If you love cottage cheese desserts for the boost of protein they offer, then you NEED to try this recipe! I love making protein ice creams using cottage cheese in my Ninja Creami and I decided to just make a creamy pudding instead this time around. This cottage cheese chocolate pudding is definitely going to be my go-to dessert now because it packs some protein, is blood sugar friendly compared to most desserts, and it’s super easy to make. It makes the creamiest pudding that pairs so well with fresh diced strawberries (and maybe a little drizzle of melted chocolate…!). You’ll definitely want to give this Healthy Chocolate Protein Pudding a try for your next dessert night.

Nutritional benefits of this recipe

  • Cottage cheese is rich in protein and essential nutrients. It has calcium and phosphorus, which support strong bones and teeth, and it provides B vitamins that help with energy production and nervous system health. Cottage cheese also contains beneficial minerals like selenium and potassium, supporting immune function and electrolyte balance. Thanks to its combination of protein and naturally occurring fats, it’s satiating, blood sugar balancing, and nourishing.
  • Maple syrup is a natural sweetener from the sap of maple trees. It’s rich in antioxidants and minerals such as manganese, zinc, copper, calcium, potassium, and riboflavin.
  • Raw cacao powder is a deeply nourishing. It’s known for its exceptionally high antioxidant content, especially flavonoids that support heart health and help combat oxidative stress. It’s a rich source of magnesium, which plays a key role in muscle function, nervous system balance, and energy production, along with iron, copper, and manganese to support oxygen transport and metabolism. Raw cacao also contains natural compounds like theobromine and phenylethylamine that can support focus and mood.
  • Strawberries are packed with natural antioxidants and vitamin C, which support immune health and collagen production. They’re a good source of fiber to aid digestion and help maintain balanced blood sugar, while their polyphenols support heart health and reduce oxidative stress. Strawberries also provide potassium, folate, and manganese, contributing to healthy circulation, cell function, and metabolism.

Ingredients for Healthy Chocolate Protein Pudding

Cottage cheese – I highly recommend using a good quality brand such as Good Culture because the flavor is so much better!

Pure maple syrup – this is from sap trees, so it’s healthy and nutrient-dense. I’m not talking about the processed pancake syrup – just real, pure, maple syrup!

Cacao powder – I prefer to use raw cacao powder rather than the processed cocoa powder. It’s much more nutrient-dense and much more rich in antioxidants because it’s not heat treated.

Strawberries – for topping – I find this just takes it to a whole new level!

Vanilla extract

If you want a richer chocolate flavor that masks the cottage cheese even more – then you can add a few tablespoons of melted chocolate.

Super easy and Healthy Chocolate Protein Pudding in two little cups - made from cottage cheese for healthy protein.

How to make Healthy Chocolate Protein Pudding

  1. Put all ingredients into a food processor and blend until smooth.
  2. Spoon into bowls and serve immediately or refrigerate for 1-2 hours for a thicker texture.
  3. Garnish with diced strawberries, and melted chocolate if desired. Other great options include shredded coconut, raspberries, banana slices, mini chocolate chips, peanut butter or almond butter, etc.
  4. To melt chocolate: Combine 2 Tbsp of chocolate chips with 1/2 tsp of avocado oil and melt slowly in a double boiler or in 10 second increments in the microwave, stirring in between. Add a tad more avocado oil if needed – this really just depends on the brand you use.

Modifications and variations

  • Add peanut butter or almond butter for extra flavor.
  • Feel free to adjust the cacao powder and maple syrup to preference. For example, if you want a really rich chocolate, then increase the cacao to 5-6 Tablespoons.
  • If you’re really looking to mask the cottage cheese flavor, then add a few tablespoons of melted chocolate to the pudding! Just melt 3 Tablespoons of chocolate chips with 1/2-1 teaspoon of avocado oil in a double boiler (or in 10 second increments in the microwave, stirring in between) and whip it into the pudding while it’s still in the food processor. Another trick I learned is a Tablespoon of heavy cream makes it taste a little richer too. Then if you have time, refrigerate it for an hour or two to make sure it’s cold and thickened.
