Healthy Reese’s Cups

Ingredients

Units Scale

Middle:

1/3 cup natural almond butter or peanut butter

1 Tbsp coconut sugar

Chocolate Coating:

1 cup milk chocolate chips or semi-sweet chocolate chips (I use Hu’s because it’s healthier)

1 Tbsp avocado oil or coconut oil

Utensils Needed:

12 slot mini muffin tin

Mini muffin cups

Instructions

  1. Place mini muffin cups into a 12 slot mini muffin tin.
  2. Mix together the almond butter and coconut sugar and set aside.
  3. Melt together the chocolate chips with the oil. You can either do this in 20-30 second increments in the microwave or in a double broiler.
  4. Put some of the melted chocolate into the bottom of each muffin cup, filling 1/4 of the way. Place a dollop of the almond butter mixture into the center then put more of the melted chocolate on top, evenly dispersing it for all of them.
  5. Place in the refrigerator for 30 minutes (or 10 minutes in the freezer). Keep them stored in the refrigerator for best results. Once they’re hardened in their cups, you can put them all in a container or bag to store easier than in the muffin tin. Store in the refrigerator in an airtight container for up to 5 days.
