Healthy Turkey Sloppy Joes

Ingredients

1 pound ground turkey

1 Tbsp olive oil

1 small onion, diced

1 small bell pepper, diced

3 garlic cloves, minced

1 can (15 oz) tomato sauce

2 Tbsp tomato paste

2 Tbsp honey (or coconut sugar or pure maple syrup)

1 Tbsp apple cider vinegar or red wine vinegar

1 tsp yellow mustard

1 tsp smoked paprika

1 tsp chili powder

1/2 tsp salt (use a little more if you use tomato sauce with no added salt)

1/8 tsp black pepper

Sprouted Ezekiel buns for serving

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add the onion, bell pepper, and garlic. Cook until the vegetables are softened, about 5 minutes.
  2. Add the ground turkey and cook until browned, breaking up any large chunks with a spoon, about 5-7 minutes.
  3. Add the tomato paste, tomato sauce, honey, apple cider vinegar, mustard, chili powder, smoked paprika, salt, and black pepper. Stir until well combined. Bring the mixture to a heavy simmer then turn down to med-low to continue simmering for 10-15 minutes until the sauce has thickened.
  4. Serve on your choice of buns and enjoy!
