Italian Chicken Salad

Ingredients

Chicken:

3 small or 2 large chicken breasts2 Tbsp avocado oil1 Tbsp dried Italian herbs1/4 tsp black pepper1/2 tsp salt

Salad:

3 cups chopped romain lettuce3 cups mixed greens1 medium avocado, cut into chunks2 large bell peppers, chopped1 small cucumber, chopped1/3 cup chopped green onions1 pint cherry tomatoes, halved6 radishes, thinly slicedYour choice of dressing

Instructions

  1. Toss the chicken in the avocado oil, Italian seasoning, black pepper, and salt. Let it marinate for 1 hour (or you don’t have to, it just soaks in the flavor more).
  2. Bake the chicken at 400ºF for 30-40 mins until the internal temp is 165F. The time will depend on how big the chicken breasts are. If they are small (6oz) then they shouldn’t be longer than 30 minutes. If you use large chicken breasts, then it’ll be closer to 40 minutes.
  3. While the chicken is cooking, prepare the veggies as instructed.
  4. Evenly distribute the lettuce and mixed greens into bowls. Evenly distribute the chopped veggies, sliced radishes, and avocado chunks on top of them.
  5. When the chicken is finished, cut it into slices or chunks and evenly distribute onto salads. Top with your favorite healthy dressing.
