If you love a fruit-packed, refreshing smoothie, then this Lemon Blueberry Smoothie is definitely for you! This smoothie is loaded with frozen blueberries and banana, and has the perfect hint of lemon from fresh lemon juice and zest.

Nutritional benefits of this Lemon Blueberry Smoothie

  • Banana is rich in potassium, magnesium, vitamin B6. It also has prebiotic fiber which feeds the good bacteria in our gut microbiome.
  • Blueberries are rich in antioxidants, vitamins, and minerals.
  • Lemon is rich in Vitamin C, potassium, magnesium, and folate. It’s great for immunity, vibrancy, detoxification, digestion, and more!

Ingredients for a Lemon Blueberry Smoothie

Frozen blueberries

Frozen banana

Lemon – you’ll use both the juice and the zest of a large lemon (or more if you like it strong)

Spinach

Milk of choice – I used raw grass-fed milk.

Method

  1. Blend together all the ingredients in a high-powered blender until smooth. Add more milk if you like a thinner smoothie, and if you want more lemon flavor then add more lemon zest and juice as well.

Modifications

  • Decrease the milk to 3/4 cup if you like a really thick smoothie.
  • Use only 1/4-1/2 cup of milk to make a thick smoothie bowl (where you eat it with a spoon instead of a straw) and you can top it with granola, coconut flakes, fresh blueberries, etc. Also, feel free to add acai powder to this version for a Lemon Blueberry Acai bowl! Keep in mind you’ll need a high-powered blender for this to blend efficiently – or you can spend a few extra patient minutes mixing and blending with a regular blender. Regular blenders are not very efficient at blending frozen fruit with very little milk!
  • Add collagen powder for some protein.
  • Incorporate some greek yogurt in place of some of the milk to add some extra protein.
  • Add a dash of lemon extract for more lemon flavor if desired.
