Lemon Garlic Aioli Salmon Filets

Salmon:
4 (6-oz) wild caught salmon filets
1 Tbsp tablespoon olive oil
Salt and pepper
Lemon Garlic Aioli:
1/4 cup paleo mayonnaise (I like primal kitchen)
1/2 large lemon, juiced
1 garlic clove, minced
Sprinkle of salt & pepper
Garnish:
1 Tbsp Parsley, finely chopped
Instructions
- Preheat a cast iron skillet over medium high heat.
- Lemon Garlic Aioli: combine the mayo, lemon juice, minced garlic, salt and pepper in a small bowl and set aside. Save the chopped parsley for later.
- Season the salmon filets with salt and pepper. Add the olive oil and the salmon into the skillet and cook until slightly crispy and golden, about 5 minutes. Flip the salmon and cook another 1-2 minutes, until the salmon flakes easily with a fork.
- Top with the lemon garlic aioli and a sprinkle of chopped parsley.

Notes
This is delicious paired with a caesar salad and sprouted quinoa.
Store leftovers in the refrigerator in an airtight container for 2-3 days.
