Ingredients

Salmon:

4 (6-oz) wild caught salmon filets

1 Tbsp tablespoon olive oil

Salt and pepper

Lemon Garlic Aioli:

1/4 cup paleo mayonnaise (I like primal kitchen)

1/2 large lemon, juiced

1 garlic clove, minced

Sprinkle of salt & pepper

Garnish:

1 Tbsp Parsley, finely chopped

Instructions

  1. Preheat a cast iron skillet over medium high heat.
  2. Lemon Garlic Aioli: combine the mayo, lemon juice, minced garlic, salt and pepper in a small bowl and set aside. Save the chopped parsley for later.
  3. Season the salmon filets with salt and pepper. Add the olive oil and the salmon into the skillet and cook until slightly crispy and golden, about 5 minutes. Flip the salmon and cook another 1-2 minutes, until the salmon flakes easily with a fork.
  4. Top with the lemon garlic aioli and a sprinkle of chopped parsley.

Notes

This is delicious paired with a caesar salad and sprouted quinoa.

Store leftovers in the refrigerator in an airtight container for 2-3 days.
