Maple Cinnamon Oatmeal Cookies

Ingredients

Dry

2 1/4 cups oat flour, spooned and leveled (230g)

1 1/2 tsp ground cinnamon

1/2 tsp baking soda

Pinch of salt

1 cup rolled oats (100g)

1/4 cup chopped nuts, raisins, or chocolate chips (optional)

Wet

1/4 cup avocado oil

1/3 cup maple syrup

1 large egg

1 tsp maple extract

Instructions

  1. Combine the dry ingredients in a large bowl.
  2. In a separate small bowl, whisk together the wet ingredients.
  3. Add the wet ingredients to the dry ingredients and mix to combine.
  4. Place dough, covered, in the refrigerator for 20 minutes.
  5. Preheat oven to 350ºF. Line a baking sheet with parchment paper.
  6. Wet your hands slightly (to prevent sticking) then form dough into balls and place on a baking sheet. Flatten slightly with the palm of your hands. They don’t spread much in the oven.
  7. Bake for 6-7 minutes. They may look underdone, but still take them out – they set as they cool and you don’t want them to dry out.
  8. Let them cool for 10 minutes.
