2 medium bell peppers, chopped
1 pint cherry tomatoes, halved
1/2 red onion, chopped

1/2 large lemon, juiced
1 tsp dried oregano
1/2 tsp salt

(optional for spice) 1 tsp red pepper flakes

- In a large bowl, toss together all of the ingredients.
- Toss again just before serving to reincorporate the oil, vinegar, and lemon juice that likely settled to the bottom.
