Ingredients

Units Scale

2 cups oats (I use sprouted rolled oats)

1 3/4 cup unsweetened vanilla almond milk (or other milk of choice)

1 cup ripe peaches, chopped (1 large) – I like to add just a bit more sometimes

1 teaspoon cinnamon

1 Tbsp pure vanilla extract

3 Tbsp pure maple syrup

2 Tbsp unrefined coconut oil, melted

3 pinches salt

(Optional) 1/4 cup grass-fed collagen (or your favorite healthy vanilla protein powder)

Instructions

  1. Preheat oven to 350°F.
  2. Mix all ingredients together in a large bowl.
  3. Pour into an 8×8 baking dish.
  4. Bake for 35 minutes.
  5. Remove baked oatmeal from the oven and let sit for 5 minutes to cool. Add a portion into a bowl and enjoy!

Notes

Store in the refrigerator in an airtight container for up to 5 days.
