Peanut Butter Monkey Bars

Ingredients

2 cups oat flour

1/2 cup natural peanut butter

1/4 cup honey or maple syrup

1 ripe banana, mashed

2 large eggs, room temperature

1/4 cup milk of choice

1 teaspoon vanilla extract

1/2 teaspoon baking soda

1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F and line a baking dish with parchment paper.
  2. In a large mixing bowl, combine oat flour, baking soda, and salt. Mix well.
  3. In a separate bowl, whisk together peanut butter, honey or maple syrup, mashed banana, milk, eggs, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until a thick batter forms. If desired, fold in any additions such as dark chocolate chips.
  5. Transfer the batter into the prepared baking dish and spread it evenly, using a spatula. The batter will be thick.
  6. Bake for 18 minutes or until a toothpick inserted into the center comes out clean.
  7. Remove from the oven and allow the bars to cool in the baking dish for about 10 minutes. Slice and enjoy!
