Pina Colada Smoothie (2 Ingredients!)

This simple smoothie is the easiest you’ll ever find while still bursting with flavor! You only need two ingredients for the smoothie: Canned coconut milk and frozen pineapple. Just combine the coconut milk with frozen pineapple and you are set. All it comes down to is the perfect ratio and using the proper coconut milk.

What kind of coconut milk?

I used canned coconut milk for this recipe. The canned version (rather than the one you find in a carton) is creamier and more flavorful. You can use “classic” coconut milk (full-fat) or you can use “light/lite” coconut milk, which is lower in fat but still much creamier than the cartoned versions which are watered down heavily.

Frozen fruit

I recommend using frozen fruit for making smoothies because it ensures the smoothie is cold and creamy. I actually cut up fresh pineapple and froze it myself, but you can always buy the fruit already frozen in the freezer section of most grocery stores.

Modifications

I love the simplicity of this recipe, but if you would like to add protein, then you can either add a couple scoops of collagen or a plain protein powder.

Ingredients

Units Scale

2 cups frozen pineapple (diced/small cubes)

1 cup light coconut milk (from a can not carton)

Optional addition for protein: 1 scoop collagen (code christine15)

Instructions

  1. If your frozen pineapple is super large chunks, then you may need more since you can’t fit as much into a cup. Adjust it as necessary to achieve your desired smoothie texture. Blend the pineapple with the coconut milk, pour into a cup, and enjoy!
