Brew a double shot of espresso into a mug, then whisk in date syrup, salt, and vanilla extract if using.
Steam the milk and pour into the mug.
If desired, you can add some homemade whipped cream on top: Using a milk frother, whip the cream with the date syrup or maple syrup for about 15 seconds until thickened and creamy but still pourable. Pour on top of the latte. Sprinkle some ground cinnamon on top if desired and enjoy!
