These Sharp Cheddar Bacon Egg Bites are such an easy, delicious, and filling snack or breakfast. Meal prep them for the week to set yourself up for success with a high protein recipe!

Ingredients
Eggs
Bacon – Use a healthy bacon that is nitrate/nitrite free and sugar free.
Sharp cheddar cheese – or another cheese of choice. I always recommend getting a grass-fed cheese.
Spinach
Bell pepper
Salt
Black pepper
Optional additions: garlic powder, onion powder, dried herbs, etc.
Method
- Preheat the oven to 350ºF and oil the silicone muffin pans.
- Cook the bacon then chop up. Set aside.
- Prep the bell pepper, spinach, and cheese. Set aside.
- In a large bowl, whisk together the eggs with the salt and black pepper.
- Then evenly distribute the spinach, bell pepper, bacon pieces, and shredded cheese. Pour the egg mixture over top, evenly distributing it.
- Bake for 20-25 minutes until the eggs are set.
- Let them cool for a few minutes in the pans then let them finish cooling on a wire rack. You can easily scoop them out using a spoon to separate them from the sides and bottom by twisting the spoon around them.
- Keep leftovers in an airtight container in the refrigerator and consume within 5 days.
Tools needed
Silicone muffin pans make this recipe SO easy! Regular muffin pans are so difficult to clean after cooking egg bites, but they easily pop right out with the silicone pans, leaving no mess behind.
Modifications
- Add fresh garlic and onion for more flavor.
- Sub some of the eggs for egg whites for a higher protein, lower calorie version.
- Add any additional vegetables that you have on hand.
