Simple Pesto Chicken Sandwich

Everyone loves sandwiches, right?! They’re easy, flavorful, refreshing, and most definitely a “soul food”. I’ve been loving lots of fresh herbs and veggies lately, and sandwiches are one of my favorite ways to implement them! This Pesto Chicken Sandwich is a favorite in our house right now because it’s so easy but also super flavorful.

Ingredients

Bread – I recommend sprouted or sourdough for the healthiest options.

Pesto sauce – I have a homemade recipe that I highly recommend! Homemade pesto is SO much more flavorful than store-bought.

Cheese – I prefer sharp cheddar for this sandwich. I’ve also made it using mozzarella cheese, but I have to admit – sharp cheddar cheese is the best because it packs a more flavorful punch than mozzarella.

Chicken breast – I used rotisserie chicken.

Tomato – I used Roma tomato, but you can use any variety that you prefer. Heirloom would also be wonderful!

Optional greens: I highly recommend adding a couple small fresh basil leaves to the sandwich, but you can also add a touch of arugula, romaine lettuce, or microgreens.

Method

  1. Preheat a skillet to medium heat. 
  2. Butter one side of each piece of bread. Place one slice of the bread (butter side down) onto the skillet. 
  3. Spread the pesto sauce on the bread and layer with the cheese, tomato, chicken breast, and fresh basil leaves or greens if you have them/want them. Place the other slice of bread on top. 
  4. Cook for several minutes until the bread is golden, then flip over and cook another several minutes on the other side until golden. 
  5. Remove from pan, slice in half, and enjoy!

Make it your own

  • Sub chicken breast for turkey, or omit it altogether.
  • Use an herb garlic butter for the bread instead of regular butter for even more flavor.
  • Use sun-dried tomatoes instead of fresh, or both!
