Simple Pesto Chicken Sandwich

Ingredients

2 slices sprouted bread or sourdough

1 Tbsp pesto sauce

12 slices sharp white cheddar cheese

2.5 oz cooked chicken breast (I used rotisserie)

2 slices of tomato

Optional: A couple fresh basil leaves

Optional: Arugula, romaine lettuce, or microgreens

Instructions

  1. Preheat a skillet to medium heat. 
  2. Butter one side of each piece of bread. Place one slice of the bread (butter side down) onto the skillet. 
  3. Spread the pesto sauce on the bread and layer with the cheese, tomato, chicken breast, and fresh basil leaves or greens if you have them/want them. Place the other slice of bread on top. 
  4. Cook for several minutes until the bread is golden, then flip over and cook another several minutes on the other side until golden. 
  5. Remove from pan, slice in half, and enjoy!
