How to make Strawberry Basil Bruschetta

  1. Make the strawberry basil salsa by mixing together the diced strawberries, finely chopped basil, drizzle of honey, and balsamic vinegar. Set aside
  2. Slice the baguette into about 1/2-3/4 inch slices, depending on preference. I did mine about 1/2 inches for reference.
  3. Smear the cream cheese on top of the baguette slices, then place a dollop of the strawberry basil salsa on top.
  4. Place the Strawberry Basil Bruschetta in a single layer on a serving platter. Best served immediately.
  5. Tips to make ahead of time: You can make the strawberry salsa a few hours before and store in the refrigerator, then right before serving, slice the bread and top with the cream cheese and salsa. Or wrap the fully prepared bruschetta tightly to prevent airflow and store in the refrigerator for up to a couple hours (if using cream cheese, it may dry and crack if stored longer – you don’t need to worry about it as much if using ricotta, mascarpone, or goat cheese).

Modifications

  • Use any soft cheese you want in place of the cream cheese – Ricotta, mascarpone, and goat cheese would all work great! It’s just according to preference.
  • Drizzle some balsamic vinaigrette on top of the prepped Strawberry Basil Bruschetta slices.
