This Strawberry Glow Drink is a healthy, creamy, and delicious strawberry drink that’s rich in antioxidants and nutrients. It has fresh strawberries, coconut milk, collagen, and acai powder, making it a powerhouse of nutrients and delicious flavor. I’ve been drinking it all week and still haven’t gotten tired of it! It’s naturally sweetened using maple syrup, or you can also use honey or coconut sugar as the sweetener instead. Or, if you want a tart drink, then feel free to leave out the sweetener completely. This drink is fun to make, it’s beautiful in color, and it is so deliciously flavorful!
Nutritional benefits of this Strawberry Glow Drink
- Acai powder is from açaí berries that are small, dark purple fruits native to the Amazon rainforest. They are rich in antioxidants, including anthocyanins, which protect cells from damage caused by free radicals, which helps reduce the risk of chronic diseases and slow down the aging process. It’s also a powerhouse for brain, heart, and immune health, and it’s great for increasing energy, improving digestion, and reducing inflammation.

Ingredients for Strawberry Glow Drink
Fresh strawberries – frozen won’t work here, it would create a thick smoothie instead of a creamy drink.
Classic coconut milk from a can – I used the full-fat classic coconut milk without guar from Native Forest.
Collagen Peptides – I love Further Food!
Maple syrup – or you can use honey or coconut sugar
Water
Ice – for serving, not blending.
Optional: Lime or lemon juice

How to make a Strawberry Glow Drink
- Blend together the strawberries, coconut milk, water, collagen, maple syrup, acai powder, and vanilla extract. If desired, you can also add lime juice.
- Blend it together for 1-2 minutes until completely blended. I find it becomes continually smoother as it blends for a minute or two.
- Put ice into a 16-oz cup and pour the strawberry pink glow over top. Enjoy, and let me know how you like it in the comments below!

Modifications
- Matcha marble: pour a bit of matcha over the strawberry drink for a layered aesthetic & earthy flavor.
- Add lemon or lime juice to the drink for some citrus flavor.
- Use honey or coconut sugar instead of maple syrup as the sweetener if that’s what you prefer.
- Incorporate a tiny bit of almond extract for a fun flavor addition.

Ingredients
1 cup fresh strawberries, tops removed (140g)
2 Tbsp (30g) classic coconut milk from can (I used Native Forest no guar)
1 Tbsp collagen peptides (8g) – I love Further Food!
1 1/2 – 2 tsp maple syrup (10-13g), honey, or coconut sugar (or less if you like it tart)
1 tsp acai powder (3g)
1/4 tsp pure vanilla extract
3/4–1 cup filtered water (to preference for how thin you want it) feel free to use part sparkling water for an extra refreshing texture! Or you can also use coconut water.
Optional: 1/4-1/2 lime or lemon, juiced, for a citrus addition
Ice for serving
