1 cup cashews
1 cup dates, pitted (I used deglet dates but you can also use medjool)
Zest of 2–3 large lemons (1 Tbsp zest, packed)
1/2 Tbsp lemon juice
3/4 tsp vanilla extract
1/4 teaspoon salt
You can sub any nut or seed for the cashews.
For a lemon almond flavor, you can sub the vanilla extract for 1/4 tsp almond extract. You can also use almonds instead of cashews, although I still like using cashews for the almond version!
