Sweet Lemon Bites

Ingredients

1 cup cashews

1 cup dates, pitted (I used deglet dates but you can also use medjool)

Zest of 23 large lemons (1 Tbsp zest, packed)

1/2 Tbsp lemon juice

3/4 tsp vanilla extract

1/4 teaspoon salt

Instructions

  1. Remove the pits from the dates and make sure all of the dates look fresh.
  2. Add all ingredients to a food processor. Pulse until combined, slightly coarse looking. Grab a pinch to test, it should easily stick together.
  3. Form into bite-sized balls, about 20-24.
  4. Keep refrigerated.

Notes

You can sub any nut or seed for the cashews.

For a lemon almond flavor, you can sub the vanilla extract for 1/4 tsp almond extract. You can also use almonds instead of cashews, although I still like using cashews for the almond version!
