Taco bowls are a new go-to dinner for me because they are SO easy to throw together and are incredibly flavorful. I also love that they are easily customizable, so you can make a different combination each time. This helps keep it new and fresh and interesting.

With that said, make whatever modifications you want with this recipe! It’s a great base recipe but then you can top it with whatever you want, according to the flavors you’re craving or the ingredients you have on hand.

The rice

My husband and I used cilantro lime Right Rice for this recipe, but you can use any rice you want!

The meat

We used ground turkey, but feel free to use ground beef or ground chicken! I also listed my go-to taco spices, but you can also use Siete’s taco seasoning, which is delicious. And they have spicy and mild versions.

The beans

We used Siete refried beans, but you can use regular black beans too! You can also omit them, of course.

The veggies

I call for chopped romaine lettuce, tomatoes, and onion, because I figure those are the veggies everyone enjoys. But feel free to choose different ones if you don’t like one of them. I also leave it up to you for how much salsa, guacamole, sour cream, cilantro, lime, etc. to add, since that varies quite a bit for every individual.

Chips

We love eating our taco bowls with chips if we have them on hand. We always opt for Siete chips since they’re made with cassava flour instead of corn, and their lime flavor is wonderful!!

Ingredients

Taco Meat:

1 lb ground turkey or grass-fed ground beef

2 1/2 Tbsp taco seasoning (or use 1 Tbsp chili powder, 2 tsp ground cumin, 1 tsp onion powder, 1/2 tsp paprika, 1/2 tsp dried oregano, 1/2 tsp garlic powder)

3/4 tsp salt (decrease or omit if using a store-bought taco seasoning that has salt added)

1/4 tsp black pepper

To Serve:

2 cups cooked rice (or a package of Right Rice – I used cilantro Lime)

1 can Siete refried black beans (or a can of regular black beans, drained and rinsed)

1 cup chopped romaine lettuce

1 tomato, diced

1/2 onion, diced (or a several green onions, thinly sliced)

To preference: Cilantro, salsa, guacamole, sour cream, lime juice, and Siete chips if desired

Instructions

  1. Prepare your rice as needed, according to the instructions on the package.
  2. In a large skillet, heat olive oil or avocado oil to med-high heat. Add the ground turkey and cook, breaking up the pieces. Add the spices and continue cooking and stirring until it is fully cooked and no longer pink.
  3. Prepare your toppings.
  4. Assemble your bowls – put rice and chopped romaine lettuce on the bottom and top with taco meat, black beans, diced tomatoes, diced onion, and other desired toppings. Enjoy!
