Ingredients

1/3 cup honey (or maple syrup, but maple syrup makes more crumbly granola rather than big clusters)

2 Tbsp melted coconut oil or butter, or avocado oil

1 1/2 tsp pure vanilla extract

1 1/2 cups sprouted rolled oats

2/3 cup chopped nuts / seeds of choice (I did a mixture of chopped pecans and whole pumpkin seeds)

Few pinches of salt

1/3 cup unsweetened dried fruit of choice like dried blueberries, cherries, raisins, cranberries, pineapple, etc. (dice up large fruit)

Instructions

  1. Preheat the oven to 320ºF. Line a baking sheet with parchment paper.
  2. In a large bowl, mix together the honey, melted coconut oil (or butter, or avocado oil), and vanilla extract. 
  3. Add the rolled oats, nuts/seeds, and a few pinches of salt and mix thoroughly.
  4. Dump the granola mixture onto the parchment paper. Using a spatula, press the granola down into a single layer about 1/4-1/2″ thick. Wet the spatula with water if the mixture is sticking to it. 
  5. Bake for 20-30 minutes until the granola is browned on the edges. 
  6. Remove from the oven and dump the dried fruit on top. Press some of it down into the granola. Do not break the granola up into clusters yet because the granola does not harden until it cools down. Let it cool to room temperature for about an hour before breaking up into clusters.
  7. Store in an airtight container at room temperature for up to 2 weeks.
