Whipped Goat Cheese with Honey & Thyme

I LOVE goat cheese, so I really wanted the flavor to truly shine through, so I added just a hint of honey, fresh lemon juice, and thyme for a little extra depth but not to be overpowering. If you would like a stronger flavor from one of them (or all), then add to taste.

Ingredients

Scale

12 oz goat cheese

1 Tbsp honey, plus more for drizzling

1/2 small lemon, juiced

2 tsp fresh thyme leaves, more to taste

1/4 tsp salt, to taste

1/4 tsp granulated garlic

Optional: Fresh cracked black pepper

For serving: Pita, naan, sourdough

Instructions

  1. Put all the ingredients in a food processor. Pulse several times until everything is incorporated, but do not over-blend. I noticed that I blended for too long and it turned from creamy to more liquidy. Just FYI!
  2. Transfer to a serving bowl, drizzle honey on top, and add fresh thyme leaves for a pretty look. Serve with pita, naan, sourdough, or even sliced tortillas (as pictured, I used homemade wheat tortillas lol!).
  3. Enjoy!
