This Blueberry Honey Baked Oatmeal is the perfect addition to your morning routine! There are 20 grams of protein in each serving and it also has healthy carbohydrates and healthy fat, making it a balanced and nourishing meal. Feel free to sub the blueberries for any other fruit that you would like.

  • It is high in protein from the grass-fed collagen, milk, and eggs. This makes it a satiating, nourishing breakfast that’ll keep your blood sugar balanced throughout the morning.
  • It is rich in antioxidants, fiber, vitamins, and minerals from the blueberries, sprouted oats, etc.!
  • Sprouted oats are easier to digest because the phytates, lectins, and starches have been broken down through the sprouting process. This makes the oats more nutrient dense, higher in protein, and easier on our digestive system.

Ingredients for Blueberry Honey Baked Oatmeal

Sprouted rolled oats – Regular rolled oats works too, but I love the health benefits of sprouted! I use the brand One Degree Organics. I buy it in bulk at Costco, but you can also buy from One Degree’s website or a local health food store.

Milk – I used whole milk, but you can use coconut milk or a creamy nut milk if you are dairy free.

Blueberries

Grass-fed collagen – or use your favorite unflavored or vanilla protein powder

Eggs

Vanilla extract

Baking powder

Salt

Blueberry Honey Baked Oatmeal

How to make Blueberry Honey Baked Oatmeal

  1. Preheat oven to 350°F.
  2. Mix all ingredients together in a large bowl.
  3. Pour into an 8×8 baking dish.
  4. Bake for 37-40 minutes until a toothpick comes out clean. 
  5. Remove baked oatmeal from the oven and let sit for 5 minutes to cool. Enjoy! 

Modifications

  • Use maple syrup instead of honey. Keep in mind that maple syrup isn’t quite as sweet as honey, so you can add a tad more.
  • Add lemon juice and zest for a lemon blueberry flavor.
  • Substitute any other berry or chopped fruit in place of the blueberries. You can also used mixed berries!

Notes

Store in the refrigerator in an airtight container for up to 5 days.
