Blueberry & Honey Baked Oatmeal

This oatmeal is the perfect addition to your morning routine! Feel free to sub the blueberries for any other fruit that you would like. I have also have a Peach Baked Oatmeal that is almost identical to this one except it uses peaches and maple syrup instead!

Ingredients

Units Scale

2 cups sprouted rolled oats

1 3/4 cups unsweetened almond milk (unsweetened vanilla is great here)

1 teaspoon cinnamon

1 Tbsp pure vanilla extract

3/4 cup organic blueberries (I used frozen, but fresh works too)

3 Tbsp honey

2 Tbsp unrefined coconut oil, melted

3 pinches salt

1/4 cup grass-fed collagen or your favorite healthy vanilla protein powder

Instructions

  1. Preheat oven to 350°F.
  2. Mix all ingredients together in a large bowl.
  3. Pour into an 8×8 baking dish.
  4. Bake for 35 minutes.
  5. Remove baked oatmeal from the oven and let sit for 5 minutes to cool. Add a portion into a bowl and top with almond milk before serving if desired.

Notes

Store in the refrigerator in an airtight container for up to 5 days.
