Easy Pasta Salad

Dairy-Free, Gluten-Free, Lunch, Nut-Free, Quick and Easy, Sides 3 comments

If you’re trying to eat more veggies but hate the thought of spinach and salad greens – then this is the recipe you can try! It has plenty of healthy vegetables in it and is also made with Banza pasta which is a high-protein pasta (but you can use any pasta you prefer!).

Spring and summer just calls for fresh meals like this, so be sure to save this recipe to make over the next few months!

Ingredients for the pasta salad

Banza Pasta – this is a pasta made from chickpeas, making it a high-protein, gluten-free option. However, use whatever pasta you prefer.

Cherry tomatoes

Cucumber

Bell pepper

Red onion

Olives – use kalamata or black olives

Basil

Parsley

Ingredients for the herb olive oil dressing

Olive oil

Lemon

Garlic cloves

Stone ground mustard

Oregano

Thyme

Salt

Black pepper

Method

  1. Cook the pasta as instructed on the package.
  2. Prep the veggies as instructed. Mix together the dressing ingredients.
  3. Assemble by mixing all prepped ingredients together and tossing in dressing.
  4. Serve and enjoy!

Modifications

  • Choose whatever veggies you want!
  • Omit the herbs or sub for your favorite
  • Use shallots instead of red onion if desired
  • Omit the olives if you don’t like them – no hard feelings!

Pasta Salad

1 (8oz) box Banza pasta, cooked (or sub pasta of choice)

1/2 pint cherry tomatoes, halved

1 small cucumber, sliced and quartered

1 small-medium bell pepper, chopped or diced

1/4 cup thinly sliced red onion

1/4 cup pitted sliced black or green olives

1/4 cup pitted sliced kalamata olives

1/4 cup chopped fresh basil

3 Tbsp chopped fresh parsley

Optional: 1/4 cup sliced banana peppers (or sub pepperoncini)

Herbs Olive Oil Dressing

3 Tbsp olive oil

1/2 medium lemon, juiced

2 small garlic cloves, minced

2 tsp stone ground mustard

1/2 tsp dried oregano

1/4 tsp dried thyme

1/8 tsp salt, more to taste

Freshly ground black pepper (6 grinds, to preference)
